I found your log as I was searching for "cooking with heirloom potatoes", and will share your chips recipe with my reader's list. I've been growing 3 potato varieties in my Biodynamic Garden, but now I have joined Seed Saver Exchange and discovered 600 plus varieties. It's great to find cooks that understand the value of diversity!
